When I transferred to Quezon City, I had a hard time adjusting to the fact that the only available fish in the market -- bangus, hito and galunggong. Admittedly, when I was in Malabon, I never ate galunggong, and until now I don't eat hito. For a true-blue "Malaboner", I am a big fan of Maya maya, lapu lapu, sapsap, dalagang bukid, kalankaw, espada, bisugo, tanigue at talimusak. There is always an assigned recipe for specific kinds of fish. Kalankaw and espada for frying; lapu lapu and dalagang bukid for pesa; bisugo and talimusak for paksiw; tanigue for sinigang sa sampaloc, sapsap for sinigang sa bayabas.
